Sicilian Pistachio and Rose Petal Artisan Chocolate Bar

If you had of asked me 10 years ago what my opinion of rose as a flavour in candy it would have been very different than now. Rose is one of those flavours that really is underrated, mixed just right it can be a sweet flavour without being too sharp. If you don’t believe me try eating a rose pedal, it’s really not that bad. It’s also one of the more traditional flavours of candy. It’s been said that noblemen would have the roses in their garden covered in spun sugar and they would walk in the garden and snack. It’s also a fairly traditional flavour in Turkish delight, and that’s one of the oldest treats still made today.

So the idea of having bits of candied rose pedal didn’t shock me, instead it impressed me. I like that the folks at Sucre have a little nod in the world of candy tradition. With the imported pistachios it’s pretty much a true mix of old school candy and modern milk chocolate. It’s original without being too strange, all this and it looks really neat too.

The problem I do have with this bar is the fact that you really can’t taste the pistachio or rose at all or at least not as much as I’d like. When you first bite into one of the rose petals you get a slight rose flavour but the minute your teeth get into the chocolate the flavour is gone. It’s pretty much the same with the pistachios. Both of these flavours are really subtle and just get lost in the heavy chocolate. It’s a shame and I’m not really sure how you would fix this problem.
